I love PTO. I took a random day off today to get a few things done, and just hang out with my dog and some Oprah’s Lifeclass. I love lunch on PTO. I like to just throw a few things together that are in the fridge, like the above.
I also love PTO because you can lose track of time. I ate this lunch at 4pm. This might be considered a large snack…
What are you eating for lunch today? I’m having a spectacular salad full of CSA veggies- every last one of them is from the CSA box! I already miss our CSA and we haven’t even run out of veggies yet.
But what I really want to be eating is SOUP! Homemade soup! It was dark when I woke up, it feels like Fall and I just saw online that Starbucks will debut their red Christmas cups in just 8 days. All this fall/winterness makes me want soup. And maybe a nap…
…But, just try and tell me this image from Smitten Kitchen doesn’t make you want to run home and slave over the stove for a few… minutes. Instead of taking a lunch break today (still bad at lunch breaks) I decided to collect a list of soups I hope to make this winter.

Last week the sun, flowers and spring all decided to pull it together. It’s now officially spring in Minneapolis. Though my allergies are seriously not happy about this, and are trying to bring me down with them… I’d rather wear flip-flops outside and sneeze/cough/have this pesky sinus infection for a bit than wear snow boots. So, since spring decided to pull it together (PIT), I figured I should PIT and update.
Downtown Minneapolis has an all day farmers market each Thursday from late May to late September, so my co-worker/desk neighbor/employee of the month Jake and I decided to ignore the piles of work on our desks and head out in search of food! Sunshine will make me better at taking a lunch break. Everyone else had the same idea.
We really didn’t know where to head as we work about a half mile away in the Warehouse District and don’t get downtown for lunch much. Then we spotted food trucks. I have to admit, it was my first time getting a real meal from a food truck since college! Do any of you VCU readers remember that hippie food truck outside The Commons/Temple Hall? I dream of it.
I was super excited we spotted Dandelion Kitchen. They had a vegetarian friendly menu and said they used organic and local foods when possible. Sold!There was a large line for this place, but everywhere at noon on a nice day has a line, so we decided it was worth it to wait. Long lines= good food, right? In this case, right.
I went for the Mozzarella & Tomato Sandwich: house-made walnut pesto, local mozzarella, heirloom tomatoes, and arugula. Best decision ever!
I also decided to try their homemade Lemon Ginger soda, which was also totally delicious and refreshing. Not too strong or sweet, which is typically an issue I run into with homemade sodas or drinks.I hope to go back to Dandelion Kitchen this summer (I hear they have fancy popsicles!), and blog some more food truck experiences!

I’m bad at lunch. I’m worse at breakfast, but that is a different story.
By bad at lunch, I mean bad at taking a break at work. I like to eat at my desk in order to get more stuff done so I can go home at a reasonable-ish hour. I sometimes feel taking a lunch break is a waste of time + I hate spending money on going out for lunch, unless it’s once a week or so.
I read this article last month and have been thinking about it ever since. So… during the month of March (tomorrow, can you believe it!?!) I am going to attempt to take a guilt-free lunch break. I really shouldn’t feel guilty about taking a half hour or hour out of my day considering I get here an hour early almost every day. I’m hoping the weather gets better to talk a walk or eat with co-workers at one of our two tables at work. I’m even starting a day early with my resolution by blogging right now!
Sometimes the day gets away from me and I forget to eat until a little later than most people, but I’ll try to fix that in March too. I am, however, pretty good at lunch in that I tend to eat healthy. For example:
I had some Trader Joe’s Roasted Red Pepper +Tomato Soup w/ some whole grain goldfish crackers, a string cheese and a not-so-ripe pear. It was all great. I like to leave a pack of string cheese and a box of TJ’s soup in the fridge at work for a quick lunch if I forget mine or don’t feel like my leftovers that day. I also like to hoard fruit at my desk, and my work also has a fruit bowl pretty much every day so I have some good options.
